Chinese meat jerky!! (Bak kwa)



So last weekend I had a sudden urge to want to cook something and before that I was actually looking up recipes to make and I came across several that I REALLY wanted to eat. One of those was Chinese jerky that we normally buy during Chinese New Year!

I was so excited and I honestly had to try it right away. We woke up early on Saturday morning and went out in the cold rain to pick up the ground pork for the recipe. There were a lot of ingredients that was needed but being from an Asian household, we had almost everything anyway!

The following recipe is adapted from Eat Your Heart Out. All of the measurements was converted to the metric units since I am from the U.S. ;) 

Ingredients:

  • 1 pound of ground pork
  • half cup of fine brown sugar
  • 1/8 teaspoon of Chinese five spice powder
  • A pinch of white pepper
  • 1/2 teaspoon of salt
  • 1 1/2 tablespoons of honey (original recipe called for 2 tablespoons but I found it to be too sweet)
  • 1 tablespoon of light soy sauce
  • 1/2 tablespoon of Chinese cooking rice wine
  • 1/2 tablespoon of Fish sauce
  • 1 tablespoon of oyster sauce

The recipe was super easy and it was definitely overwhelming in the beginning since there were so many ingredients. The jerky came out so flavorful and it even had the same 'snap' as the store that we usually buy it from when biting into it! 



The store in Chinatown, NY usually sells this for $17~18 per pound but guess what? I can make this myself now and its REALLY EASY! I am now taking pre-orders for this coming Chinese New Year lol.
